The Mock Tender is second only to the tenderloin/filet in tenderness. And since it comes off the chuck section of the steer is has great intra-muscular marbling and a richer flavor than the tenderloin/filet. Give it a try!

Only about 4 lbs come off each steer, so this was a prized cut before the big packers did not have time for it.  This was a cut that a traditional butcher wouldn't sell!
